Does the hbase/bin/roilling-restart.sh script work properly on MapR or should we only use the web gui (or maprcli) to stop/start hbase ? (we're using MapR v1.2)

It really depends on how you are managing the hbase processes. If you are using the hbase that we ship, then the MapR warden process should be managing hbase and you should use the web GUI or CLI. On the other hand, if you are running a different hbase process without letting warden manage things, then you should handle the process using the hbase script.
From your question, it sounds like you are using the MapR distributed/managed hbase, but the need for rolling restart makes me slightly uncertain about that. If you need to do a rolling upgrade or restart of the MapR managed hbase, our support guys can walk you through the process.
