How can we do lab exercies? Is there cloud environment where we can login and do execises or do we need to set up our own ?
You can use either the MapR sandbox or a cloud platform for lab exercises. MapR does not provide the cloud environment: if you want to go that route, you would need to create the instances (and, for DEV and DA courses, install MapR and the associated components) before you could start the labs. Because of that, it's generally easiest to use the MapR sandbox. You can download and install it for free, and it has all of the components already installed.
The exception to this is the ADM 2000 curriculum. You can use the sandbox to complete some of the labs, but not all of them. For example, one of the first exercises in ADM 200 is to install MapR. Since the Sandbox already has MapR installed for you, you would need to skip that lab. Some of the other ADM labs assume that you have a three-node cluster. Since the Sandbox is a single-node cluster, you will have to adapt some of the instructions to use the Sandbox.
Can I install MapR on an Amazon EC2 and would that work?
Yes - in fact, we currently use AWS clusters for our classroom training for the ADM course. This thread has some information that may help you with the setup:

The Hadoop Sandbox is a single-node cluster with everything you need already installed (the MapR converged platform, Hadoop ecosystem, Spark, Hue, MCS ...)
